The sagemath stack is available from conda-forge for osx and linux. It's probably worth exploring.

With anaconda in the mix: the conda solve didn't complete (even with errors) within an hour. Presumably we'd have to go conda-forge only...

Turns out the issue is sage requiring jsonschema <3 and jupyterlab_server requiring jsonschema >3
