add a section on opening datasets

Opening datasets for students is sometimes a bit difficult - particularly because csv files automatically open in Excel (but then the column format is off). For the next edition, I need to have a section on opening csv files quite early on in the course.

In addition, I need to ensure students do the terminal exercises on time.
