This functionality has been released in v3.65.0 of the Terraform AWS Provider. Please see the Terraform documentation on provider versioning or reach out if you need any assistance upgrading. Recently the AWS SDK for Go has added support for managing CloudFront field level encryption configurations as first announced in: https://aws.amazon.com/about-aws/whats-new/2017/12/introducing-field-level-encryption-on-amazon-cloudfront/
