Use color-contrast() for text & icon colors

Safari just recently added support for color-contrast().

Now we can toss any color at all at --bg and we’ll either get white or black text, depending on what has the most contrast.

This would be good to apply to text & icons, especially if we add more themes / user defined custom themes.
