Update the documentation

The documentation is pretty outdated and not relevant with the latest versions of react-native. Can you update the documentation? I can help in the same if someone needs help!

Did you make it work with the latest version of react-native? (trying with the 0.74.0-rc.5)
Right now I haven't been able to make it use different .env files and its only reading from the default config

I can confirm it does not work with 0.74.

 "react-native": "0.74.0",
    "react-native-config": "^1.5.1"

I had it working a few months back with the below version in the separate projects

"react-native": "0.73.6",
    "react-native-config": "^1.5.1",
