Choose which binary to use

I have multiple binaries of different versions (4.1.1, 3.04.01) installed in the same machine, and want to compare the difference between them. Can I specify the binary path as an environment variable so I can switch easily? In the code I see tesseract_cmd = 'tesseract', which always use the default one.
