Would like a custom icon which has the notification icon on it and when selected will open the system notifications.

This will completely eliminate the need for using two fingers (two hands) and also moving up to the notification area to drag it down.

Yup, would be great to have a quick way to open notifications (using one hand).

Having a specific icon is one of the ideas, but the downside would be to have one less favorite icon available.

Other idea might be to expand "ignore touches" option, eg. set percentage of the screen that would be ignored by pie menu and that area could be then used to pull down notifications.

I agree with you on the one less fav spot. But where can the space be ideally and is there an ignore touches feature in pie launcher already?

Yup, you have "Ignore touches" option in settings.
4 possibilities there: none, top, bottom, top+bottom.

In this case I think only bottom would make a practical sense (so let's say ~10-20% of screen bottom would not launch pie, but if you swipe it down it shows notifications.
