The App Store doesn't require a user to be signed in to download a macOS installer, but mas errors out without one. I also can't get the signin to work in one command, but I'd rather just do without if I can. The ultimate goal is to remotely push the installer to machines. I'm currently in 10.12.5, if that makes a different. Thanks!

This is a good point. Right now mas requires you to be signed in before interacting with the Mac App Store, but this may not be necessary for the macOS installers. As discussed in #106 we need to add special handling for macOS installation apps.

Are there any other cases where MAS allows apps to be downloaded without logging in first? What about other Apple apps?
