plateau: table titles not centered; some table widths change randomly and do not match PDF #39

in Plateau doc2 (sources/002-v5) the table titles are not centered above the table, the are left-justified, they should be centered; the styling is also different from the pdf they should be bold

additionally, the width of modspec tables are random, based on content; this differs from the PDF. the width of all tables in the viewer should match the width from the PDF.

incorrect example from the viewer (top table is 2-2 to compare with the PDF) bottom table exhibits full with and differs from the top table.

additionally this main issue also occurs in the viewer version of Plateau doc01 (sources/001-v5) but not just in regular tables (as there are no modspec tables in doc1)
