Ability to configure multiple Sanity clients

Is your feature request related to a problem? Please describe.

Sometimes you want to be able to configure multiple sanity clients that each have their respective uses, like one configured specifically to be used as a listener, or one configured to a specific project and/or dataset.

Describe the solution you'd like to see

In nuxt.config.js, the sanity config could also accept an array of client configs instead of only an object. This would follow a pattern I think is in other Nuxt plugins (it's been a while since I was nuxting, so I'm not sure if I remember correctly).

Describe alternatives you've considered

Going around the plugin and setting up multiple clients manually.
