Version bumping

Hi there!

Was just wondering if there were any plans to implement VCSVersionSource.set_version() so that version bumping could also be supported by this plugin?

Happy to have a go myself if that helps.

unfortunately i didnt get to put a base for this into setuptools_scm yet

it may be necesary to discuss the future naming of some details as setuptools_scm should eventually be detached from setuptools and the pyproject.toml names/keys are not clear

Sorry if I wasn't clear (or maybe have misunderstood the context of this !)

I was thinking of the behaviour described by: https://hatch.pypa.io/latest/version/#updating

ie. the usage of hatch version minor to bump the minor version.

My understanding is that this could be independent from setuptools_scm ? As we already have a way to bump version tags (without hatch-vcs) and we would just need to run the relevant vcs command to add the tag? (e.g. git tag <new-tag>)

@ofek can we provide a way for hatch to tag a version usinga signed tag that includes signatures of release artifacts

also with vcs, a way to pick a version by dropping the .dev... stuff might be nice
