Feature: Cut over to v2 API

The AI service should cut over to the new v2 API when we make that release. Example:

ai/.env.production

For the most part, for the AI service, this should just be a 1:1 replacement of v1 with v2 but may require abit more investigation to make sure it works with the v2 API before we make the cut over.
