  • WHO/FAO JECFA Safety evaluation
  • EFSA opinions
  • FSANZ Hazard Assessment

The taxonomy has a few examples already:
https://en.wiki.openfoodfacts.org/Global_additives_taxonomy

We have imported individual articles of the EFSA journal within Wikidata, which will make sourcing easier, since Open Food Facts is linked to Wikidata
