We are extending the DSSE envelope following the pending changes to the DSSE spec in secure-systems-lab/dsse#61.

We're currently using the string "OPK" for the extension "kind". We should use a proper media type for this, similar to the sigstore one: https://github.com/secure-systems-lab/dsse/blob/1edb81075b297121a318e5ae78506a2d2c208688/extensions.md?plain=1#L12
