[Vis Builder] For field summaries use agg service to make field-specific queries

In #2705, we ported over field summary views from discover, which makes a single fetch of a sample of docs with all fields. That hit data is then flattened and aggregated client-side. There's no need to do this, because OpenSearch supports agg queries to get that data directly.
