Add example usage in docs of TransactionExtension use with general, new-school transactions

Follow up on #2280

TransactionExtension introduces handling of transactions beyond the signed/unsigned account model for authorizing origins (e.g. custom crypto to do ZK proofs). We need to add a code example with such a general transaction with origin alterations to show the capabilities of the new mechanic.
