Add config.schema.json for UI-based setup

Hi @plasticrake,

This will allow users to setup this plugin without having to edit any JSON in most cases when they are using Homebridge Config UI X.

After installing the plugin users get presented with this box:

They can just click "Save" and everything will be setup for them.
