The current doc shows bits of code which are now irrelevant thanks to open_mfdataset: http://xarray.pydata.org/en/stable/io.html#id7

On a related note, it would be great to document the bottlenecks in concat / dask and how to overcome them. Related to #1391, #1495, and #1379
