- Three 9-inch round buttered and floured cake pans

- 3 cups flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 large -beaten eggs
- 3/4 cup vegetable oil
- 1 3/4 cups about 2 ripe bananas
- 1 - 8 oz. can crushed pineapple
- 1 cup chopped pecans
- 2 teaspoons vanilla extract

Heat oven to 350°. Butter and flour 3, 9-inch round cake pans. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Add eggs and vegetable oil, stirring until dry ingredients are moistened: do not beat. Stir in the bananas, pineapple with juice, pecans and vanilla.

Divide batter evenly among cake pans. Bake until cake tester (wooden toothpick) inserted in center comes out clean - 25 to 30 minutes. Let cakes cool in pans 10 minutes. then invert onto wire racks and let cool completely.

Place one cake layer on a cake plate. Cover with COCONUT HUMMINGBIRD CAKE CREAM CHEESE FROSTING and continue with the second layer and with the third to cover the whole cake.
