- 2 bunches chopped carrots
- 1/2 chopped green bell pepper
- 1 whole yellow chili
- 1 whole onion
- 1 head whole garlic
- 1 1/2 gallons water
- 4 stalks chopped celery
- 1/4 bunch whole cilantro
- 12 oz. tomato puree
- 1 pound ground beef
- 1/4 teaspoon salt
- 1 egg
- 1/4 cup rice
Mix ground beef, 1 egg, salt and 1/4 cup of rice to form 1" meatballs.
Boil water, add onion, garlic, cilantro & whole chili. Return to boil - cook a while. Add raw meatballs - cook for a while. Add celery, carrots, bell pepper. tomato puree, salt and pepper. Cook until just tender. Remove whole vegetables, (yellow chili, onion, garlic head and cilantro) before serving.
