While working on #25457 I noticed that, on the Servlet side, the HTTP Message converters were only documented in the client sections, whereas the reactive equivalent has a dedicated section for that. Also, several converters and codecs are not documented properly (for example, Protobuf) so we should expand those sections a bit.
