Hoping to do this release sometime next week! Here's a few things that would be nice to have:

Implement missing features to OCI backend #284
Add artifacts.taskrun.enabled and artifacts.oci.enabled config options to configure artifacts for signing #279
Update slsa-provenance predicate type #249
Create a release-0.6.0 branch during this release for docs
Document how to create the release- branch in our release process

After release I found a bug, which should be fixed by #298! Will do a v0.6.1 point release once it's merged.
