fwiw (for any encountering this) this can be configured back to gp2 via workers_group_defaults like this:

module "eks" {
  # ...
  workers_group_defaults {
    root_volume_type = "gp2"
  }
}

This is a pretty annoying bug, would be great to get this revert released! :)
