I am restarting the node but the display is goes blank/white with no text in the GUI so I have no idea what the status is? When I looked at the log file I see the following:
1-07-07 20:13:19.669] [info] Checking for update
[2021-07-07 20:13:21.182] [info] Update for version 3.0.2 is not available (latest version: 3.0.2, downgrade is disallowed).

I had some Theta staked then unstaked them all and am just know wanting to stake Theta and tFuel but can not seem to get the node to respond. I am wondering if I need to stake some Theta to it first?

I did, but I don't think that having anything staked matters because the snapshot file is what got corrupted. I went onto theta's official discord and got the solution, which was to visit the theta snapshot page, download from the link provided (it updates as the blockchain progresses) and replace the snapshot in my \appdata\roaming\Theta Guardian Node\ThetaGN\configs\mainnet. You should go to discord (find it on theta's main site) and verify this, so you don't have to trust me. Do not trust links provided by others. But for convenience, I screenshotted his post. I also made a similar issue on github and closed it. Hopefully my case is the same as yours and your problem can be solved.
