Documentation: Deployment docs needed

Currently, we're deploying smart contracts only to Anvil or to Alchemy.

Docs could improve to explain how these deployments work, and what happens at each step.

• Clean up README and scripts like deployment_build_op_goerli.sh (should this live under a new folder that contains deployment scripts?)
• Remove instructions for how to run scripts from those scripts, and update those instructions in documentation instead
• Create an EXAMPLES section in documentation (considering this; tracking for visibility for myself)

• I just spun up my own Orbit chain https://docs.arbitrum.io/launch-orbit-chain/orbit-gentle-introduction
• Intending to run some quick experiments on it with TAP's cap table smart contracts
