Users should be able to customize the endpoint of the docking server.

Do you use https://github.com/DS4SD/docling-serve? if so, I can allow the user to pass in a URL like "http://127.0.0.1:8000" that represents the docling server and just send the convert call to this server

I made a PR but I don't have a server that follows the docling-serve spec to test. If you have time and can test it, please let me know! Otherwise I can test it next week :-)
