Refresh / review demos wrt OSCAL and SP 800-53 versions

Both OSCAL versions, and potentially SP 800-53 versions (with the release of Rev 5.2), are behind current versions in the demonstrations.

While this may not affect them as demonstrations, it impacts their potential usefulness.

This Issue can be broken into parts if useful. But every project should be either updated; or provided with notes written to the effect that it is stable and not updated (with available rationale); or removed.
