Integrate OpenTelemetry into the bot's logging

This is just a InDusTrY sTaNdArD or a NiCe tOo hAvE move. This could just be a learning experience for the developers learning about OTEL in JS/TS space, giving the side effects is having more logs to easier trouble shoot the code.

Integrate OpenTelemetry should be done using the recommended @opentelemetry/auto-instrumentations-node instrumentation.

Describe alternatives you've considered

N/A. If this is too hard to do/not feasible for our project we can just scrap it.
