Replace poetry with uv:

Modify scripts to use uv instead of poetry.
Modify Github Actions pipelines to install and use uv instead of poetry.
Modify pyproject.toml to work with uv.
Modify .gitignore to remove referencies from poetry and include uv.
Modify Dockerfile to build using uv.
Remove poetry.lock file.
Remove poetry references from docs.
