Extending Data Mapping Examples

In the call of 25.07, we had an initial discussion on data mapping and looked at the examples at https://github.com/w3c/wot/blob/main/planning/ThingDescription/td-next-work-items/usability-and-design.md#data-schema-mapping.

That section of the document should be extended with concrete examples of these mappings. Each person who is knowledgable on these protocols can be provide examples. However, we wait a bit until we move those documents to this repository.
