Mistral Large and/or Codestral support would be awesome.

Would you be interested in contributing support?

Don't know much about mistral, but looks like it can be installed via Ollama? If so, have you tried installing from there and running:

M-x chatgpt-shell-ollama-load-models
M-x chatgpt-shell-swap-model

Does that work?
