Documentation of how calls are dispatched to fhEVM?

Hi, this is not an issue, but a question. Haven't worked with fhEVM before, but understand that this is an extension of the EVM.

What I'm wondering: How do you make this work on a technical level? How does the environment know which calls to dispatch to an external service? Where is this external service specified?

Is there a documentation on these things?

I think this might be a good place to start looking for answers, right? But (as far as I can see) it doesn't cover the integration on the implementation level (e.g., how this is integrated with hardhat)!?
