Describe the feature

I want to be able to define the theme on local zed settings under the .zed/settings.json file so I can distinguish different look for different projects. However, this seems not supported yet as mentioned in the Settings files doc:

Not all settings can be set in local files, just those that impact the behavior of the editor and language tooling. For example you can set tab_size, formatter etc. but not theme, vim_mode and similar.

If applicable, add mockups / screenshots to help present your vision of the feature
