I find the autofix of _ = foo quite handy but it feels pretty distracting when writing new code. Alas, I habitually save my files all the time, so autofixes trigger often.

Is there a way to run autofix separate from saving?

Open the command palette and search for "Fix All". You can also add a keybind to that command.
