Anyway for the default icon to show on a tab like Inspector, Console , etc?

Not currently. It would not be too difficult to enable the icon to display on the tabs, but I'd need to build special splat/index versions of the icon textures so they could use the palette correctly. This would not function with asset store addons/custom editor windows without tweaking them for the theme system.
