CMake did a change where
CMAKE_HOST_SYSTEM_PROCESSORnow has different values than before (AMD64vsx64before, etc.) which breaks the CI.Because of that, I am dropping the architecture suffix as it really isn't useful. Also, bump the GCC version to the current v12.
