  1. chore: Rename some prover env vars 

    - Renames `PROVER_TARGET|MINIMUM_STAKE_AMOUNT` to
  `PROVER_TARGET|MINIMUM_ESCROW_AMOUNT`.
- Adds a `PROVER_JOB_SOURCE_URL` to replace the overloaded
  `AZTEC_NODE_URL` on the prover agent.
- Updates the docker-compose.provernet.yml template.
- Defaults target escrow amount to twice the minimum if not set.
