[BUG] remove test coverage skip on Schema Registry SDK

Describe the bug
Schema Registry package poms contain comments:
'SchemaRegistrySkip temporarily relaxing code coverage'

Test coverage checks should not be skipped.

Should be removed after test coverage is improved.
