The marker OCR requires us to keep the GPL3 license. I'd preffer to change to MIT.

Let's remove the dependency to marker, change the marker_strategy just as an example (not enabled by default) + add to docs how to add it if someone really has to.

Let's switch to easyOCR which Docling is using by default - as an alternate option (#56)
