Help is generally supplied via the wiki manual pages, but the shortcut keys and regex reference charts were historically bundled with the release and displayed in their own dialogs. Having this information in 2 places is undesirable for maintenance, so remove the existing text files and link the Help Menu options to the manual instead. Fixes #
Clarify that surrounding, not all, quotes and brackets will be highlighted.
User can enter a single character, or a string, or a regex - improve the menu button wording to make this clearer.

Link to the manual instead of having small text files bundled with the release containing regex and keyboard shortcut help.
Also clarify wording of a couple of menu options.
