What does this Pull Request do?

Clean up of description entries in multiple files replacing Islandora Claw with Islandora 8 as appropriate.

What's new?

Update to readme to conform to new template, update maintainers.

• Strictly a textual change to the description entries of different files, names, variables and urls left untouched

How should this be tested?

To be safe someone should probably do an install to make sure that no typos were added in the process of changing the descriptions
