test: swap WETH to ETH with state

Description

This PR adds a swap WETH to ETH using anvil and the production smart contracts needed for this case.
This is the base work for more complex swaps to be added in the future.

Limitations: STX are off and it's out of scope of this PR. Swaps+STX with state will be done in the future

ℹ️ we cannot use fixtures in this case, as there's a migration that overwrites the STX value to set it ON by default, so we need to go to settings to disable the toggle
