I have Postgres 9.3 and I cannot upgrade because our product comes with Ubuntu 14.04 LTS with realtime kernel and there are already too many to upgrade. The documentation of PostgREST promised me it would with 9.3, but it says:

Oh, sorry about that. I'm guessing you saw this on tutorial 0: http://postgrest.org/en/v6.0/tutorials/tut0.html#step-2-install-postgresql, that part got outdated.

In http://postgrest.org/en/v6.0/install.html#postgresql-dependency, we mention that 9.5 or greater is required.

You may try some of the older releases, I think v0.4.4.0 or less work with 9.3.

Though you should consider upgrading postgres, the 9.3 version was already end of life in 2018: https://www.postgresql.org/support/versioning/.
