Minor improvements for TheRock CI/CD

• Use shlex for log commands
• Less verbose for AWS S3 cp logs
• Make runners more consistent! - restarted mi300 cluster, shouldn't have any more issues
• Curate name of test jobs (important info is at the end of the job, make it shorter and sweeter, no need to label test twice)
• Copy S3 artifacts parallel or in one invocation
