Add appendix with VIA vs COCO gotchas

Why is this PR needed?
While implementing the dataloaders in ethology I found a few gotchas re the data exported by VIA. For now this seems like the most relevant place to keep track of these.

What does this PR do?
Adds an appendix highlighting some differences between VIA and COCO exports.
