Remove unnecessary docs steps which cause bugs during docs build

Description

This PR seeks to fix the error seen in https://github.com/WayScience/CytoDataFrame/actions/runs/11601536468 which is a reference to files which have changed for docs from coSMicQC to CytoDataFrame.
