This also switches from my M2 to a Github-hosted M1.

Ok, this is good to go now. If this release goes well, I'll get ptex and jump off my personal M2 as well and fully transition all of a-scie to GitHub / CircleCI "free" runners. |
The roadmap shows macos-12 is supported through June this year: actions/runner-images#9255
