Source MongoDB: only discover collections on which user has reading permissions #9482

Tell us about the problem you're trying to solve

For Postgres or MySQL we only list tables on which the user has reading permission.
We should do the same for MongoDB.
It would offer a workaround for users that do not want to scan all the collections for schema discoveries (#2781).
