🐛 Destination bigquery 1s1t: wrap jsonpath fieldname in quotes

note that the name-escaping logic replaces $ with an underscore. This seems identical to legacy normalization, where $foo becomes a column called _foo.

Bigquery's jsonpath elements can be wrapped in double-quotes to handle special characters, so just do that. Add a new test case to verify this behavior.
