What
Mostly reorganization.
This pull request changes titles for the Categories under "Build a Connector" to make it more clear that these are the three main options for Connection building.
It also temporarily removes the document on Building a Java Destination because the template for this is currently unavailable. https://airbytehq-team.slack.com/archives/C027KKE4BCZ/p1715687374441969
This also re-orders material on the Testing Connectors document to put higher emphasis on CI and lower emphasis on tests for Java connectors.
